Craving Sugar?

When I am feeling a little down (or craving sugar, let's be honest) I tend to go for cupcakes. Below is my tried and true recipe for Chocolate Cupcakes with Vanilla Frosting.

Cupcakes:

Ingredients
  • 2 cups all purpose flour (since I have Celiacs I use Cup4Cup)
  • 1 tsp baking soda
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup cane sugar
  • 1/2 cup brown sugar
  • 4 large eggs, at room temperature
  • 6 ounces unsweetened chocolate, melted (see note below)
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
NOTE: To melt the chocolate, place in double broiler over simmering water on low heat for about 5-10 minutes stirring occasionally until completely smooth. Remove from heat and let cool to room temperature.

 
Baking Instructions
  1. Preheat oven to 350 degrees
  2. Line muffin tins with cupcake liners (12)
  3. In a small bowl, sift together the flour and baking soda. Set aside
  4. In a large bowl, on the medium speed of an electric mixer, cream butter until smooth. Add sugars and beat until fluffy, about 3 mins. Add the eggs one at a time, beating well after each addition. Add the cooled chocolate, mixing until well incorporated. Add the dry ingredients in three parts, alternating with the buttermilk/vanilla mixture. With each addition beat until the ingredients are incorporated but do not over-beat. Scrape as you go.
  5. Fill the cupcake liners about 3/4 full. Bake for 25-30 mins or until a cake tester comes out clean.
  6. Cool for about 10 mins then transfer them to a wire rack
  7. Let cool for at least 2 hours making the frosting as you wait.

Vanilla Buttercream Frosting

Ingredients
  • 1 cup (2 sticks) unsalted butter, softened
  • 6-8 cups powdered sugar
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract

Place the butter in a large mixing bowl and add 4 cups of the sugar and then the milk and vanilla. On medium speed beat until smooth and creamy, about 3 minutes. Gradually add the remaining sugar, 1 cup at a time, beating well after each addition (about 2 mins) until the icing is thick enough to be of good spreading consistency, not too runny and not to stiff.

You can add a few drops of food coloring if you wish

Spread on cooled cupcakes and enjoy!
